Mint Chocolate Cookie Pudding

St. Patrick’s Day is almost here.  Normally all I do to celebrate is wear a little green and make some green dessert, but with a toddler, I am thinking about making some sort of craft with him.  I like to joke to my friends and students that I am Irish, because of the red hair and freckles I have, but truth be told, it’s so far back in our family history that I can’t even claim I’m 1/42.

Regardless, I love everything Irish.  And when it comes to desserts, green, minty ones are at the top of my list.   Whether or not minty (and/or green) things originated in Ireland is a moot point.                                 Continue reading

Caprese Grilled Cheese

Grilled cheese sandwiches was one of the first things I ever learned how to make.  I remember when I was about eight years old grabbing a chair from the dining room and bringing into the kitchen right next to the counter, standing on it, and watching as my mom would show me how to slice the cheese and butter the bread.  We used to have it for dinner sometimes, and I thought that it was the best thing ever.

As you know, I am still without a kitchen.  Eric has been working hard on trying to finish the hardwood, but with only an hour in the evening to work on it, he hasn’t gotten as far as he’d like.  Good think tomorrow is Saturday!  And good thing I have a dad who knows all about this and is willing to help.  I am praying my kitchen will be back to normal by Sunday.  However, I really shouldn’t complain.  It hasn’t even been a week since we took out the carpet!  Maybe God is teaching me patience…

Anyway, I haven’t cooked or baked (which is killing me!) very much this week because the disorganized and cluttered kitchen is stressing me out, but when I saw a picture on Pinterest on some type of this grilled cheese, I knew I had to make them.  (And get over the fact that I my kitchen was a mess.  It was no excuse not to cook.  Well, at least not a reasonable one for me.) Easter Sugar Cookie Class

Well, it’s a little early for Easter, but I wanted to share a class with you that I am teaching at the end of March.  That way, if you do take the class, you can have enough time to make the cookies on your own, in time for Easter.

Just a few side notes.  One, it will be in the Portland area, so you’ll have to be within driving distance of the city.  Two, not only will you learn some techniques, like baking the sugar cookies and tips with royal icing, but you get to take home the cookies you decorated.  I love classes where you get to eat your project. :)  You don’t need to bring anything, all tools will be provided.

This will be the only Easter post for a little while, as I have some great desserts to share with you regarding St. Patrick’s Day.  I’d love to have you join me!   xoxo

Chocolate Chip Scones

Saturday morning is my favorite morning of the week.  Not because it’s Saturday, but because it’s our family day, a day where we try to relax and don’t do any chores or work–a real Sabbath.  It starts by sleeping in.  Then it progresses to me making a nice breakfast, and eventually leading to Eric and I playing with Matthew for a good chunk of the morning.  Sometimes we don’t get out of our pjs until almost noon.  Now that’s relaxing!

Most of the time I make French Toast, because that’s Eric’s favorite breakfast, but often-times, I make scones, so we can have a quick breakfast come Sunday and Monday.  And Saturday was one of those scone-breakfast mornings.  But our relaxing, casual, comfy day was turned upside down when Eric began working on installing hardwood in our condo.  I didn’t think it’d be that big of a deal, until I realized that our kitchen would soon be piled high with stuff and tools, and our house would have dust everywhere.  Add to that that we live in the upstairs unit of a condo with concrete floors, so our used-to-be-cozy house is currently the same temperature as outside.  (At least it feels that cold!)  Plus I had to leave the house for two days, because a demolition is no place for a toddler to be.  In the afternoon, this is what our living and dining room looked like.

Black Bottom Brownies

My good friend Carri-Anne had a baby girl a few weeks back.  (You can read about her baby shower here.)  Today, she and baby girl came over for lunch.  But before they did, Matthew thought he’d make something sweet and kind for them.  He ultimately settled on these brownies, which combines a little bit of brownie and cheesecake.  However, he had a rocky start.  You see, he wanted to add some Cheerios, milk, and white chocolate chips.  Maybe for a new breakfast combo…Eventually, he asked for some help to get it right, so we worked together to make these yummy brownies.  Matthew was so proud of his work.  (Sorry if the picture is a bit blurry.  It’s hard to keep a toddler smiling for more than half a second.)

These are big, fat brownies, and I love them.  The dark chocolate chips just sink into the cheesecake layer and create this level of gooey-ness that can’t be described.

I forgot that I had this recipe until last night, when I tried to make grasshopper brownies and they didn’t turn out.  (I hate directions that are unclear.  When you have a layer dessert, you need to specify if you wait for a layer to cool or not!  And it was from a published cookbook!!)  Anyway, totally not dwelling on the loss of a few hours and ingredients from last night.  This is a layered dessert and will take a little extra time, but I promise you, it is worth your while. Double Chocolate Mint Cookies

February is a dreary month in the Pacific Northwest, as I’m sure it is for many of you.  The weather yesterday was a mix of cold wind, rain, and some snow, which is not very common this time of year. (There is snow in the forecast tonight, and I am sure my students are praying for at least a delay.)

Now that Valentine’s Day is over, I am really looking forward to spring.  With St. Patrick’s Day almost here, there is certainly a lot of green going around, which is fine by me.  I’ve seen enough red and pink for a while.  And the change in color scheme made me think of some mint chips I had stashed away in my pantry.  Which then made me think of cookies, which made me think of chocolate.  (Stream of conciseness is such a funny thing.) Sinful Cupcakes

I am sorry for the long absence.  My family took a long weekend trip to Walla Walla to visit some friends.  And it always seems to take a few days to recover and get back in the swing of things.  We had a relaxing time–and when I say relaxing, I mean just sitting around, chatting, and eatinig food.  (Which was what we all needed!)  Matthew spent most of his time doing this:

We also spent time at the park, where Matthew learned how to go through a tunnel.  (His sideways hat just tells you how hip and cool he is.  We tried to fix it, but he liked it that way.  What do parents know about style anyway.)

I made these cupcakes quite some time ago, and thought that I’d share them with you while I recover from all the delicious food I ate.  I call these cupcakes Sinful because they are just that good, but really, they’re just a chocolate cake with chocolate buttercream.  Mmmm…Who can resist chocolate?  I know I can’t.
